1 tablespoon salted butter
3 tablespoons finely ground almond flour
1 tablespoon shredded Cheddar cheese
¼ teaspoon onion powder
¼ teaspoon baking powder
1 large egg, lightly beaten
Directions
Melt butter in a 4-inch ramekin in the microwave on high, about 25 seconds. Carefully remove from the microwave with a pot holder.
Add almond flour, Cheddar cheese, onion powder, and baking powder; mix until combined. Stir in egg until incorporated.
Microwave on high until set, about 90 seconds. Remove from the microwave and let stand for 1 minute.
Run a butter knife around the edges and invert onto a plate. Cut horizontally to make 2 pieces of bread.
I've subbed mozzarella for the Cheddar.
Handle with care when removing from microwave--it's hot! I have a very small microwave oven so I have to cook for 2 minutes. Most people will not have this size, but if you do and the center is not set--add another 30 seconds.
